Azienda Olearia del Chianti was founded in 1985 in Panzano in Chianti on the hills between Florence and Siena, in an area where olive groves and vineyards are an integral part of the landscape and of ancient cultural tradition.
Right from its foundation and under the guidance of the Gonnelli family, the Company has made quality its winning card in the interests of consumers who are increasingly aware of and attentive to product origin.
Our oil-press produces top quality extra virgin olive oils, including DOP Chianti Classico oil, IGP Tuscan oil, 100% Italian and biological extra virgin olive oils.
After careful washing, the olives are pressed within 24 hours of their arrival at the oil mill. The extraction process takes place at a temperature under 27 °C.
Before storage, the oil undergoes meticulous chemical tests in our analytical laboratory (500 tests a year). Our internal tasting committee then assesses and selects the oil for bottling (2,000 panel tests a year).
Quality is therefore guaranteed by strict chemical, physical and organoleptic controls which verify the pureness and genuineness of the product, from the beginning of the production process to bottling and packaging.
Oil is stored in stainless steel silos at a controlled temperature of between 18 °C and 22 °C.
In addition, to preserve all the oil's chemical and organoleptic properties and avoid oxidation, it is preserved under nitrogen.
A new and modern 6,000 m² plant (with adjoining analytical laboratory) houses the packaging department with dedicated tanks and piping for each type of oil and 4 bottling lines which guarantee an hourly production of over 20,000 bottles of various sizes: 15 ml, 30 ml, 100 ml, 250 ml, 500 ml, 750 ml, 1 L, 2 L, 3 L and 5 L (glass and tin containers).
Lastly, meticulous quality controls are performed on the filling lines by state-of-the-art machinery and personnel who are kept continuously up to date by attending training and refresher courses.
